Bread Production, Team Leader, Bakehouse

Provide overall management and supervision of the Bread/Production and Packing and Shipping Teams. Responsible for Team Member hiring, development, and out placement from Team. Also responsible for profitability, expense control, buying/ merchandizing, inventory, regularity compliance, and special projects. Complete accountability for all aspects of department operations.

DUTIES:

Perform duties related to the daily production of baked goods (very accurate mixing, dividing, shaping, proofing, and baking) to ensure consistency in daily production.

Perform all duties related to packing and shipping. Maintain all HACCP, FSMA and SSOP procedures and standards as well

Maintain quality and production standards. Ensure production schedule is followed. Ability to print formulas and batch sizes from Globalbake

Ensure accurate recording of mixing, shaping, and proofing/retarding temperature and time information.
