Purpose of the Role
The Butchery Production Controller’s responsibilities will include overseeing daily production, managing production processes, utilising butchery equipment, ensuring orders are completed, and handling day-to-day production employee issues. The correct daily production functions are met, including meat carcass breaking, bandsaw cutting, quality inspections, use of meat grinders, knives and other tools to cut meat down into smaller portions, weighing, pricing, and dispatching orders. Training and monitoring the production team on use of production equipment to ensure the team are well trained on all equipment. The role also involves speaking to store personnel to determine their needs, providing advice regarding proper cuts of meat and preparation methods, and coordinating pickups or deliveries.
